In the winter we crave things like sitting by a roaring fire, hot chocolate, perhaps a glass of mulled wine - cozy things that warm you up through and through. Enter the Gingerberry bar- Fiji Rakiraki, with a splash of India Anamalai, 70% dark with gingerbread spices, gingerbread crumbs, dried cranberries and a sprinkle of salt. Flavors of warm spice layered over a fruity rich backdrop, cranberry adds pops of brightness. I think this would pair well with port, a rich red wine or a stout, and if possible, a roaring fire (My daughter Hailey helped me dream up this bar!)
