Pineapple Li Hing Mui
On a recent trip to Maui there was a mysterious offering on the menu at Ululani’s Shave Ice - Li Hing Mui. It was available as a self serve powder to put on top of your shave ice, or you could order a drizzle of Li Hing Mui as a topping. We had to try it, and WOW! It really highlights tropical flavors like passion fruit, pineapple, or guava (all of which I love) The base is salty plum, sometimes with subtle licorice or Chinese 5 spice added. It originated with the Chinese immigrants who settled in Hawaii in the late 1800s/early 1900s to work on plantations. Naturally, I had to make a chocolate with it. Here you have it, Pineapple Li Hing Mui bar; pineapple white chocolate with Li hing Mui powder and crushed pineapple. It’s bright and creamy with a subtle sour kick that leaves your taste buds humming.
