Sweetcorn White Chocolate with Chili, Lime and Cilantro
Summer just isn’t summer without sweet corn. My grandpa’s Aunt Grace grew corn on their farm in Tomah, Wisconsin and every year my grandparents would drive down to pick up several burlap sacks of corn from them. They would drive the 4 hours back to the Twin Cities and stay up until the wee hours to prep and freeze the corn - it just wasn’t fresh enough if it wasn’t done the day it was picked. Fast forward to now, the first time I saw corn and chocolate paired together was at the Minnesota state fair a few years back - Mademoiselle Miel made a special edition corn truffle for the occasion, and wow was it delicious! Here we have my version, the Elote bar. An homage to the Mexican street food and in celebration of diversity. Sweetcorn White Chocolate with Chili, Lime and Cilantro
